Chiquiles it's What's for Breakfast

So a friend here turned me onto the idea of chiquiles for breakfast after he ordered them during a weekend adventure.

I stumbled across a recipe for them last week and decided to give them a try.

For city dwellers, chiquiles are a south of the border breakfast dish that includes homemade fire roasted salsa with green chile peppers, tortilla chips and topped with a fried egg. I added chorizo sausage, queso fresco, avocado and plain Greek yogurt (sour cream) to mine.

Very spicy but so delectable! What's your favorite breakfast?

My favorite breakfast is French toast. That's saying a lot because I love all breakfast foods. I'm a morning person and I also love making a romantic, sunrise breakfast.

Your Chiquiles look yummy, but you already knew that.

Well you stole my favorite but my own version of chilaquiles with some fresh squeezed OJ and a cup of French press coffee is my favorite weekend breakfast when I have a little more time to make breakfast. I fry my own tortillas in just a little bit of oil so they can still make good contact with the pan and get toastie and I use a red chili sauce instead of salsa. Sometimes I make the chili sauce but we're lucky enough to be able to buy it around here also.

Yum, that looks sooo good! What time is breakfast? You're cooking for all of us, right?
One of my favorite things for breakfast (on the weekend when I have time to cook) is pecan belgian waffles with lots of fresh fruit piled on and some Mexican hot chocolate.

My favorite breakfast.....I'd say it's myelin36.

But if I said that I'd get a headache inducing eye roll that I could probably feel from 6 hours away.

So I'll go with a homemade breakfast burrito with eggs, potatoes, sausage, and salsa that has had the onions strained out of it.

You are definitely right about the eye roll!

I like to have my oats in the morning
Yes, a big bowl of Scotts porridge oats really sets me up for the day.
