Blackened Salmon Salmon Blackened Blackened Salmon Remove skin from salmon Pull out pin bones Lightly oil salmon Liberally sprinkle with *Blackening Seasoning Preheat pan (preferably cast iron skillet) over medium high heat until oil is shimmering and just smoking Place salmon into pan and cook 2-3 minutes per side (turning only once) until salmon is nicely blackened and flakey Serve immediately *Blackening Seasoning 1 tablespoon paprika 2 tablespoons smoked paprika 1 teaspoon cayenne pepper 1 teaspoon thyme 1 teaspoon oregano 1 teaspoon basil 1 teaspoon garlic powder 1 tablespoon onion powder 1 teaspoon salt 1 teaspoon ground black pepper Brussel Sprouts (6-8 sprouts per serving) Trim ends of brussel sprouts Then boil in lightly salted water for 5 minutes Drain and blanch Cut sprouts in ½ (or ¼ if they are big) Slice onion (1/4 large onion per serving) Toss sprouts and onion in a bowl with 2-3 tablespoons of oil to coat and Add 2 teaspoons of *Montreal Steak Seasoning (or just salt, pepper or your favorite spices) Cook in hot pan for 6-8 minutes stirring occasionally until tender and nicely browned *Montreal Steak Seasoning 1 T Paprika 1 T paprika half sharp 2 T kosher salt 1 T power powder or flakes 1 T Onion powder or flakes 1 T Coriander crushed 1 T Dill seed 1 T red pepper flakes or ½ to 1 t cayenne pepper 1 T mustard seed crushed ½ T thyme 1/T rosemary Rice and Quinoa Mix Cook rice and Quinoa separately Use your favorite rice and cook according to directions Cook Quinoa according to directions Mix Rice and Quinoa together for a nice starch side dish |
